Apple Pie Baked Oatmeal Cups

Apple Cinnamon baked oatmeal cups are sweetened with pure maple syrup, sweet honeycrisp apples, and cinnamon Wacky Apple sauce and make for the perfect, plan ahead breakfast. 

They are perfect by themselves or served with a dollop of honey Greek yogurt and a sprinkle of cinnamon and pecans. 

Apple Pie Baked Oatmeal Cups:

Ingredients:

  • 2 eggs
  • ¼ cup coconut oil
  • 1/2 cup raw honey or pure maple syrup
  •  ½ cup Wacky applesauce (cinnamon or golden taste best with this recipe)
  • 1 1/4 cups milk (or whatever milk substitute you like)
  • 2 tsp. vanilla extract
  • ½ tsp. salt
  • 1 1/2 teaspoons ground cinnamon (1 tsp if using cinnamon apple sauce)
  • 3 cups old fashioned rolled oats
  • 2 tsp. baking powder
  • 1/2 Apple, chopped 
  • Optional: your favorite toppings (fruit, nuts, chocolate chips, etc.)

Directions: 
Preheat the oven to 350 degrees. Line a muffin tin with paper/foil muffin liners, or silicone liners.
In a large bowl, whisk the eggs, oil, and honey or maple syrup until mixed thoroughly. Add the applesauce, milk, vanilla, salt, and cinnamon. Whisk until well combined. Stir in the oats, apples and baking powder.
Fill the muffin tin with ¼ cup of the oat mixture in each muffin cup. Add your favorite toppings. Push the toppings down into the oat mixture with a spoon.
Bake for 30 minutes. Let them cool for 5 min. Top with honey greek yogurt and nuts if you would like. Store in an airtight container in refrigerator for 7-10 days or freeze in a covered container or zip top storage bag.
