*Wacky Applesauce Bread, Cake and Cupcakes

1 Recipe ~ Multiple Uses

I love this recipe; it is such an easy and versatile recipe. You can use this one recipe for a multitude of applications. Pour it into bread pans, for a great breakfast treat. Turn it into cupcakes and enjoy decorating them with your kids. You can even pour it into two round cake pans and make a 2 layer cake with a cream cheese frosting for a delicious holiday cake. Wrap any of them up and gift to your friends and family! A fun, easy and delicious holiday gift!

Preheat oven to 350°F

  • 1 ½ sticks softened organic butter
  • 1½ cups organic sugar
  • 1 tsp vanilla
  • 3 eggs organic
  • 2 cups (16oz) Cinnamon Wacky Apple applesauce

Cream together butter and sugar in a stand mixer. Add remaining ingredients. Be careful to not overbeat the eggs when cooking at altitude.

Mix dry ingredients together in a separate bowl.

  • 3 cups sifted organic flour
  • 1 tsp salt
  • 1½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 2 cups fresh apples, peeled and chopped (about 3 Wacky’s Fresh Apples)

Slowly add dry ingredients to wet ingredients in mixer. Once combined, remove from stand mixer and fold in chopped fresh apples.

Divide between 2 bread pans, bake at 350°F for 1 hour.

For cupcakes: divide batter evenly between 2 cupcake pans. Bake at 350°F for 15-20 minutes.

For mini bread loaves: Bake at 350°F for 35-45 minutes.

Decorating ideas:

Make a simple sugar glaze with 1 cup sifted powdered sugar and 3 TBLS Wacky Apple Juice (water also works). Drizzle and allow to dry.

A simple cream cheese frosting really kicks up this recipe from a bread, to a dessert. I like this recipe:

  • 1 stick organic butter, softened to room temperature
  • 2 packages organic cream cheese, room temperature
  • 1 tsp vanilla
  • Powdered sugar to taste. 2-3 cups.

Cream together first 3 ingredients until smooth. Slowly add powdered sugar until it is as sweet as you want it. Use food coloring to color your frosting. Great ideas for decorating are colorful sprinkles, candies and gummies.

*Sarah’s Signature Wacky Apple Crisp

Filling

- 6 Wacky Apples (about 4 cups)

- 1 TBLS Lemon

- 1 tsp flour

- 1/2 tsp cinnamon

- 1/4 tsp nutmeg

Crisp topping

- 1 Stick of Butter

- 1 cup rolled oats

- 1/2 cup flour

- 1/2 cup brown sugar

- 1/2 tsp vanilla

- 1 tsp cinnamon

- 1/4 tsp nutmeg

Combine Filling ingredients, mix until well combine and put in the bottom of a pie dish. Combine all Topping ingredients together, mix well until well blended and clumps form. Top the apples with the topping and pat down to form crust.

Bake at 350 degrees for 30-40 minutes! Enjoy! Serve warm over vanilla ice cream or yogurt.

Note: This is a wonderful recipe and activity to do with kids! Let the kids get their hands in the bowls to do the mixing.

Don’t be afraid to adjust the recipe to your liking. Feel free to add nuts, coconut, or dried fruit to the crumb topping. If you want less sugar, feel free to reduce it. I have also made it with only 1/2 stick of butter instead of 1 full stick. It worked just fine, it just wasn’t as shiny or crumbly, but I was tasty!

*Wacky Apple Wild Berry Blaster Smoothie

Makes approximately four 8oz servings

Two 4oz WA Wild Berry Applesauce cups

Two 4oz WA Jr. Wild Berry Apple Juice cups

One Large Handful Fresh or frozen Organic Blueberries approx. 1 cup

One Large Handful Fresh or frozen Organic Blackberries approx. 1 cup

One Large Handful Fresh or frozen Organic Strawberries approx. 1 cup

Blend and serve! Delicious!

Makes 1 large smoothie

1 cup Frozen Organic Blackberries

1 4oz Wacky Apple Golden Applesauce

1 Large ripe organic plum

1 cup Coconut Water

Blend & Serve Immediately! Yum!
