Spring Green Brunch

We partnered up with our favorite green salsa gal, Winking Girl Foods to create a St.Patrick’s day and Spring inspired brunch. 

St.Patrick’s day means GREEN and Spring is the start of the planting and growing of all those FRESH foods we can’t get in the winter. 

This healthy brunch with sausage and asparagus quiche and green juice can be enjoyed anytime of year, but is a festive green holiday treat that is perfect to kick off Spring. 

Spring brunch

Wacky Green Juice:

  • 1 small cucumber, peeled and cut into thick slices
  • handful of flat leaf parsley
  • 1/2 of an Asian pear or green apple, peeled or left with skin on (whatever you choose. The skin is the healthiest part)
  • 1/2 teaspoon of ginger root, fresh, diced 
  • 1 cup of spinach 
  • 1 cup of Wacky Apple applejuice 

Combine all ingredients in a blender and blend on high speed for 20-45 seconds or until everything is combined and smooth in consistency. Enjoy! 

Winking Girl Salsa Sausage and Aspargus Quiche: 

½ pound breakfast sausage
1/8 cup Winking Girl Salsa (any flavor works great)
5-6 stalks of asparagus, chopped
5 eggs, beaten
1/8 cup heavy cream (or milk)
1 Tbsp dill weed
Salt and pepper, to taste
Butter or oil for greasing the dish

Preheat oven to 325 degrees. Grease a 10” round pie dish. Brown breakfast sausage in small pieces. Once the sausage is half way cooked through, add the asparagus and cook until no pink remains in the sausage. Stir in Winking Girl Salsa and let simmer for 2 minutes. Remove from heat. In a seperate bowl, beat together eggs with cream, dill, and salt and pepper. Add to sausage mixture and immediately pour into pie pan. Bake for 35-40 minutes until edges begin to brown and egg is cooked all the way through. Top with cheese, sour cream, avocado, or more of your favorite flavor of Winking Girl Salsa!
This can be used as a breakfast or main dish.
