Apple Cupcakes

Celebrate the apple harvest, Autumn, a special teacher, or an apple loving kid, with these cute apple shaped and apple loaded cupcakes.  Get creative and let your kids help cook and decorate. We aren’t huge fans of artificial colors and extra sugars, so try choosing a natural dye to color your cupcakes, and go for a cream cheese frosting rather than a sugar filled one.  In the end, just enjoy a fun day baking with your family.

Apple Cupcakes:

 Ingredients:

  • cupcake mix (we like Immaculate Yellow Cake Mix)
  • 1 apple, shredded
  • 1/2 teaspoon of cinnamon
  • cupcake liners and muffin tin
  • marbles or tinfoil
  • red, green or white colored frosting (we like natural dyes like India Tree or Color Garden), cream cheese, butter, powdered sugar, vanilla and Wacky Apple apple juice.
  • pretzel sticks
  • green gumdrops (or get creative and make your own “leaf”
  • apples

Directions:

Preheat oven to 350 degrees. Line a muffin tin with cupcake liners and stick a marble or ball of tin foil in one side to make a crease. Prepare cupcake mix according to directions.  Add in one apple, shredded and 1/2 teaspoon of cinnamon to the mix.  Bake cupcakes according to directions.  Let cool 10 minutes before frosting.

To make frosting, combine 8oz cream cheese (softened), 2 tablespoons butter (softened), 1 cup powdered sugar, 1 teaspoon vanilla extract, and 1 tablespoon of Wacky Apple apple juice in a medium sixed bowl.  With an electric mixer, blend until smooth.  Choose a natural dye and mix in according to dye directions. Frost cupcakes. Stick a 1/2 of pretzel stick in and a gum drop as finishing touches. Can be kept in refrigerator for 3-4 days.
