Applesauce Gingerbread Cookies

Wacky_Apple_Applesauce_GingerSnaps1aThese fabulous little cookies contain only half the fat as traditional Gingerbread cookies. They taste great and make for a fun family activity!

– 1 egg
– 1/2 cup cinnamon Wacky Apple Applesauce
– 1/3 cup non-sulfured molasses
– 3 TBSP softened butter
– 3/4 cup packed brown sugar
– 3 cups flour
– 1 tsp baking soda
– 2 tsp ground ginger
– 1 tsp cinnamon
– 1/2 tsp allspice
– 1/4 cloves

Mix the first 5 ingredients together in a large mixing bowl. In a separate bowl, mix remaining ingredients. Once both bowls have been combined, slowly add the dry ingredients to the wet ingredients until just incorporated. Be careful to not over mix. Separate batter into 3 batches and wrap in plastic wrap or wax paper and refrigerate for at least 2 hours. Once cool, liberally flour your work surface and roll out 1 batch at a time, while keeping the others in the fridge while you work. Cut out cookies to desired shape. Place on floured cookies sheet, and bake at 350 degrees for 10 minutes. For the icing. Mix 1 cup powdered sugar with 1/4 cup Wacky Apple juice. Use a plastic zip top bag as a piping bag. Fill with icing and cut a tiny piece of the tip of the bag off. The smaller the whole the easier to pipe with. Get the whole family involved to decorate the cookies!
