Tuna Salad Bites
These Tuna Salad Bites make for the perfect low-carb or clean eating lunch or snack. They also are great for tiny, kid hands as a healthy after school snack. Homemade tuna salad made with greek yogurt and placed atop a sweet, crunchy Honeycrisp apple slice.
Tuna Salad Bites:
Ingredients:
- 1 can of wild caught tuna
- 1/4 cup red pepper, diced
- 1/4 cup celery, diced
- 1/4 cup plain greek yogurt
- 1/2 tablespoon lemon juice, fresh squeezed
- 1/4 teaspoon lemon zest
- salt and pepper to taste
- scallions or parsley to top, optional
- Apple, slices cut thick
Directions:
Combine all ingredients, except apple slices, scallions and parsley if using, in a medium bowl. Mix tuna mixture well and place on top of the apple slices. Top with parsley and scallions if using.
