Butternut Squash Wacky Apple Crockpot Soup

What’s not to love about a meal that is healthy and quick to prepare?

This Butternut Squash soup is so easy to make. Just throw all the ingredients in your slow cooker and head out the door for work, or for a fun family ski day.

We you return, you have a warm and healthy waiting for you to devour on a cold, winter day.

Sweetened with our golden apple sauce and loaded with fresh herbs and garlic to help boost immunity. This soup serves as a fabulous vegetarian, vegan, or gluten free meal.

Butternut Squash Wacky Apple Crockpot SoupĀ 

Ingredients:

2 cups vegetable or chicken stock
3 cloves garlic, peeled and minced
1 carrot, peeled and diced
1 4oz cup of Golden Wacky Apple applesauce
1 medium (uncooked) butternut squash, peeled, seeded and diced Or Frozen
1 sprig fresh sage
1 sprig fresh thyme
1 white onion, diced
1/2 teaspoon salt, or more to taste
1/4 teaspoon freshly-ground black pepper, or more to taste
1/8 teaspoon cayenne, or more to taste
pinch of ground cinnamon and nutmeg
1/2 cup canned (unsweetened) coconut milk
optional garnishes: extra coconut milk, pumpkin seeds, paprika, cayenne pepper

Directions:

Combine all ingredients in a crockpot and Cook for 6-8 hours on low, or 3-4 hours on high, or until the squash is completely tender and mashes easily with a fork.

Puree the soup until smooth using an immersion blender. If you don’t have an immersion blender, you can transfer the soup in two batches into a traditional blender, be very careful when working with hot liquids. Season with additional salt and pepper if needed. Garnish as desired.

Serve hot and enjoy!
