Wacky Apple Cake

Apple cakeWe made a healthier version of Apple cake without sacrificing its delicious flavor. Applesauce and greek yogurt help to keep this cake light on calories, and the apples, cinnamon and nutmeg help keep it flavorful.

Ingredients:

  • 1 cup of brown sugar or coconut sugar
  • 1/3 cup of coconut oil, melted
  • 1 egg, room temperature
  • 1/2 cup of greek yogurt, plain or vanilla flavored
  • 1/2 cup cinnamon flavored Wacky Apple apple sauce
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 1/2 cups unbleached white, all purpose flour
  • 2 cups of apples, chopped (we used a variety of Fuji, Rome, Golden, and Macintosh)
  • 1/4 cup of organic sugar, coconut sugar or sucanat sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon butter
  • 1/2 cup pecans, chopped, optional

Directions:

Preheat oven to 325 degrees.  Use a tablespoon of coconut oil to grease a 9×13 cake pan.  Combine all of the ingredients except the last 3 and optional pecans in a large bowl.  Mix well, but don’t over mix as the cake may come out dry.  Pour batter into your 9×13 inch pan.  Combine the last 3 ingredients to make a topping and sprinkle it evenly over the batter.  Top with pecans if desired. Bake for 40-45 minutes or until golden brown and a toothpick inserted in the center comes out clean. Best when served warm.
